Vendanges

Hand-harvested by a small team of regular pickers, using 20kg crates.  
20-hectare hillside vineyard, yield: 23 hl/ha.

Vinification

– The CINSAULT is directly pressed. It brings roundness and fruitiness.  
– The MOURVÈDRE comes from direct saignée (free-run juice) and press. It provides good structure, freshness, and complexity.  
The two grape varieties are blended before fermentation.  
Long fermentation in stainless steel tanks. Temperature is controlled but not kept low: around 20°C on average.

Elevage

Aged in stainless steel tanks for 6 months to preserve the freshness of the aromas.

Caracteristiques

The vineyard overlooks the sea, clinging from terrace to terrace up to 300 meters in altitude, on slopes that form a vast natural amphitheater. It is planted on an ancient Triassic soil, characterized by a very high limestone content.  
This unique setting, combined with a bold blend of grape varieties, gives this rosé its distinctive character, complexity, and elegance.

Dégustation

The 2023 rosé comes from a relatively dry year, yet it expresses this character in a remarkably positive way—through density, energy, and restrained power.  
As we taste it on February 22, it’s still in need of several more weeks to fully relax, expand, and harmonize. But already, it offers an avalanche of red fruits, a hint of spice, a touch of its signature licorice, and a fleshy, juicy fullness that sets off an explosion of sensational... sensations!  
By summer, it will have gained more body and a lingering saline finish, enhanced by a touch of elegant bitterness.

FOOD & WINE PAIRINGS:
This rosé pairs beautifully with Mediterranean cuisine—vibrant, creative, and rich with delicate and rare spices. A rosé for all four seasons: light and fruity in its early months, then evolving into something more mineral, complex, structured, and long on the palate.  
Think red mullet, bottarga, saffron, Iberico de Bellota ham, anchovy dip, Roquefort, arugula… refined and delicate flavors. Grilled lamb or pork with crispy skin and rich juices also make for a fantastic match.
